I scream, you scream, we all scream for ice-cream!

Doesn’t this sentence sum up summer? I mean there is nothing better than a cold ice-cream on a hot summer day?

I love this recipe quickie, it’s simple, healthy, and the kids will love it too!

I used coconut cream instead of coconut milk and it’s pretty darn delish if I do say so myself. Coconut milk is more liquidy, I prefer the thicker, richer consistency of coconut cream. It’s also sweeter, so no need to add anything to it!

This is a great snack if you are craving something sweet but don’t want all the dairy and sugar that comes with traditional ice cream. All you need is a blender.

A few facts on matcha:

The nutrients in matcha is equivalent to 10 cups of steeped green tea.
High quality matcha is silkier and tastier than lower quality matcha. It’s so important to pick a good matcha, you can read more about that here.

Instructions
  1. Blend the bananas and coconut cream until smooth and creamy
  2. Add the matcha powder and blend again until its all mixed in
  3. If you want it to have a harder consistency put it in the fridge for 2 hours
  4. Sprinkle with coconut shaving, or toppings of your choice and serve
